The Perfect Sourdough: A Beginner’s Guide

Baking sourdough at home can seem daunting, but with the right approach, it’s easier than you think. Here’s a simple guide to help you master the art of sourdough bread.

Step 1: Making Your Starter Start by mixing equal parts of flour and water in a glass jar. Cover it with a cloth and let it sit at room temperature. Every day for a week, feed your starter with a bit more flour and water. You’ll know it’s ready when it’s bubbly and has a pleasant, tangy smell.

Step 2: Mixing the Dough In a large bowl, mix your starter with flour, water, and a bit of salt. Stir until combined, then let it rest for 30 minutes. This step is called autolyse, and it helps develop the gluten in your dough.

Step 3: Stretch and Fold Over the next few hours, you’ll stretch and fold the dough every 30 minutes. This technique strengthens the dough without kneading. After the final fold, let the dough rise in a cool place overnight.

Step 4: Shaping and Proofing In the morning, gently shape the dough into a round or oval loaf. Place it in a proofing basket or a bowl lined with a floured cloth. Let it rise until it’s puffy and almost doubled in size.

Step 5: Baking Preheat your oven to its highest setting with a Dutch oven inside. Once hot, carefully transfer your dough into the Dutch oven, score the top, and bake with the lid on for 20 minutes. Remove the lid and bake for another 20-25 minutes until the crust is golden brown.

Enjoying Your Sourdough Let your sourdough cool completely before slicing. Enjoy the crisp crust and chewy crumb—perfect for sandwiches, toast, or simply on its own with a pat of butter.
